Recently, I’ve rediscovered Mexican food! This is a favorite ethnic cuisine of many Americans and it shows with the large number of Mexican restaurants around. It’s fun to eat at a Mexican restaurant and it’s also fun to prepare it at home. Tacos, enchiladas, Spanish Rice are the most commonly prepared Mexican dishes, but how about a casserole?
The recipe I’m sharing is for one called “Spanish Delight”. This is a main dish that uses ground beef, along with onion, green peppers, tomatoes, creamed corn and a hefty shot of chili powder! It also has uses noodles, which are cooked with this beef mixture, then it’s topped with cheese. This is a meal in itself when you add a green salad and a hot bread.
Let’s review the recipe a bit: the recipe calls for bacon fat. Personally, I prefer to use vegetable oil, simply because I don’t keep bacon fat on hand and vegetable oil is a much healthier fat. The 3 tablespoons of chili powder is a correct measurement. If you feel this is entirely too much for your taste, by all means reduce the amount. The cheese slices can be the regular cheddar cheese or if you would like more of a Mexican touch, the Monterey Jack cheese would be an appropriate choice, too.
This is also a good recipe for a beginning cook to make. Little supervision would be needed, especially for the experienced beginning cook. This would be a good time for a new cook to learn about the foods of other ethnic backgrounds and this recipe is easy enough for him or her to get acquainted with Mexican food.

Whenever you’re set for some Mexican food, who says you have to leave home? Just go into the kitchen and put together this Spanish dish!
- 1/3 cup bacon fat OR vegetable oil
- 1 large onion, diced
- 1/2 green Bell pepper, seeded and diced
- 1-1/2 lbs. ground beef
- 1 (14 oz.) can tomatoes
- 1 (14 oz.) can creamed corn
- 3 tablespoons chili powder (may adjust the amount according to personal taste)
- salt and pepper to taste
- 1 pkg. medium noodles.
- Sharp Cheddar cheese or Monterey Jack cheese slices
In a skillet, heat the fat or oil. Add the onion and peppers and saute until tender. Add the meat and brown, stirring often. Drain the fat. Add the tomatoes, corn and chili powder, along with salt and pepper to taste. Cover and let simmer for about 15 minutes, stirring occasionally. Add the noodles and cook until tender. Turn the mixture into a shallow 1-1/2 qt. baking dish. Top with cheese slices and bake at 400 degrees until cheese melts. Serves 4-6.
